Hells Bells

I LOVE concerts, I always have and you can ask Matt the minute I found out AC/DC was coming to Denver I freaked! If you remember back when we were in San Fran we toured AT&T park and saw them setting up for AC/DC and I was like "If only..." and my prayers were answered!
 This was my BIG Christmas gift as well as my Valentine's Gift, these tickets were SUPER pricey but OMG were they worth every penny!  Below is Back in Black and my Senior year in High School this was the song we danced to (Pom) at our HUGE Pep Rally at the beginning of the school year, just a super neat full circle moment!
 Matt likes AC/DC but wasn't as excited as I was, this was ME all the way.... but when we left he looked at me and said this was a Top 5 concert of all time. I agree and this might have been my TOP concert ever. It was funny... the crowd was 90% men and they all looked like they crawled out of their 1980s Rock-n-Roll HOLE!
 They were selling the AC/DC devil horns and uh.... ya.... I HAD to have some. Look at me, hard core rocker! I am not sure our fancy Sushi dinner before hand fit in with the "theme" but it was such a wonderful night. I thanked Matt over and over.
 Matt and I both got our souvenir AC/DC shirts on the way out. And our favorite song they did live was prolly... Thunderstruck, we lost our minds! BUT, if I could say one thing negative I would say it was the volume of the concert. We were close.... 18 rows up in front but my ears rung until the next morning. I wish I had ear plugs and I still would of heard it fine, it was the loudest concert ever.
SO we all know I love going to concerts and I doubt I can remember them all but I thought it would be fun to list out as many as I can for ya.........And you can see they span across the board for sure!

 Destiny's Child, N*Sync, Justin Timberlake (4 times), Britney Spears (4 times), Christina Aguilara, Asleep at the Wheel, Jessica Simpson, Ashley Simpson, Olivia Newton-John. The Killers, The Strokes, Incubus (5 times), Coldplay, Michael Buble (3 times), Chicago (3 times), Kansas, Earth Wind and Fire, Rick Springfield, Huey Lewis and the News, Kings of Leon (3 times), John Mayer (2 times),  No Doubt, Sugar Ray, Blues Travelers, Imagine Dragons (2 times), Garth Brooks, AC/DC,....
I know there are more but I can't think of them now.

Happy.....

Happy Valentine's Day friends and family....I love each and everyone of you!!! I hope everyone has a Valentine's day filled with love......my Valentine for all of you......This video!!!! This literally cracks me up, because if you have a cat or any animal then this "dance move" is very familiar! I will admit this is 3 parts funny to 1 part sad, my Bella is a particularly "pukey" cat so this makes me laugh.....but I hope you enjoy it........ I'm Sexy and I know it..........

Love is all around...

Since Valentine's Day was only yesterday what is 1 more V-Day post gonna hurt? Well, Matt had to work last night so I snuggled on the couch with the dogs while watching the Bachelor. (Brad is so boring)! Matt got home around 9:30 and had a V-Day surprise for me............Tickets to see Kings of Leon in Tulsa with my bestie Amanda and her Hubby Buddy! I am so excited!! Can't wait until April 8! SO thoughtful! Thanks Matt, we will have so much fun!
I saw this cute Valentine's Day quiz on some people's blog yesterday and wanted to jump and join the fun too!!! You should too...
1. What is your favorite romantic comedy?
hhmm.....Not sure so here is a few I like....Hitch, You Got Mail and just wait I bet one will come to me later today! The Proposal! I love that movie too and not just because Ryan Reynolds is in it!HA

2. What are your favorite flowers?
I am not very picky so anything will do!

3. What is your favorite Valentine's Day treat to eat?
Cake or cupcakes of any kind......well not Red Velvet!! I think Red Velvet is the most over rated cake flavor!

4. Describe your best Valentine's Day.
hhmm......I am not sure we usually do not do anything big but I will go with our first V-Day together... Matt came over to my apartment, I cooked for him and then we watched a movie on the couch! We also swapped gifts ...I got him new Nikes! It was a true "date" and I love how it has turned into many many more!

5. What has been the most romantic night of your life?
Wow, Ok.....I will say our proposal that Matt created on his own and was too die for! Can you believe I married a man who would do all this for me? Best proposal EVER!
6. What's your go to date night outfit?
Honestly, we are so low key I would say an Old Navy fleece, jeans and tennis shoes (coach one's to be exact) I know so sexy huh? :)

7. Where is your favorite place to go on a date?
The Warren Theatre and sit in the balcony where you can eat and drink while watching the movie in huge plush seats!
8. Store bought Valentine's or homemade?
Food....homemade.........Cards? Store!
9. What is your favorite love song?
hmm.....I guess I will say our first dance "Sunday kinda Love" by Etta James....why? When we dated I was dancing for 2 teams (NBA and Arena) and working full time and almost every week the only day where I would have at least 5 whole hours together was Sunday!

10. If you had to pick a date for Valentine's who would it be?
I will give you a hint....his name starts with an M

Cookie Dough Truffles

3 posts in 1 day? Why? Because I like you.....and because I have gotten a few wonderfully nice comments today that put me in a good mood!!! So...need a last minute decadent V-Day idea??  I have just what you need..........COOKIE Dough Truffles, oh yes that's right!
Recipe:
8 tbsp. unsalted butter, at room temperature
¾ cup light brown sugar, packed
2 ¼ cup all-purpose flour
1 (14 oz.) can sweetened condensed milk
1 tsp. vanilla extract
½ cup mini semisweet chocolate chips
1½ lb. semisweet or milk chocolate, coarsely chopped (Baker's chocolate)
Mini chocolate chips (for garnish)
Combine the butter and sugar in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 minutes. Beat in the flour, sweetened condensed milk and vanilla until incorporated and smooth. Stir in the chocolate chips. Cover with plastic wrap and refrigerate until the mixture has firmed up enough to form balls
Shape the chilled cookie dough mixture into 1-1½ inch balls. Place on a baking sheet lined with wax paper. Cover loosely, transfer the pan to the freezer and chill for 1-2 hours.
When ready to dip the truffles, melt the chopped chocolate in a heatproof bowl (you may have to re-heat every once in a while) Dip each chilled truffle, one at a time using a fork, coating in chocolate and shaking gently or tapping against the bowl to remove the excess.
Transfer to a wax-paper lined surface. If using mini chocolate chips for garnish, sprinkle on top quickly after dipping each truffle before the chocolate sets.
Keep in fridge until ready to serve.....but I set them out for about 20minutes to get the chill off before eating! These babies are RICH and I love them! I gave them to my family for Valentine's Day and they were thrilled!

And this video below is what was going on in my office last week while I worked from home! SO glad I finally had my camera out to document! We call this "Weenie Fight" ...yes, they are just playing it is so cute, I love how they try to sound so tough! And Abner the smaller weenie is a scrapper...he dominates!

{Feb 14} Whether in love or out, on Valentine's Day I {LOVE} to.....
I love to bake for one......today I brought Valentine's Day homemade Ricotta cookies for my co-workers! It is nice to bring just something small to make even 1 person smile. Secondly, I love to stay home. This day is a crazy eat out day so I love nothing more than staying in. Matt actually works tonight so I will spend the evening with my other loves...my animals. Matt and I celebrated V-Day this past Saturday by doing a movie and dinner in the Warren Movie Balcony, it was perfect! And we saw Just Go With It which I LOVED It! It was soo cute and funny...you should see it!

Valentine's Day Challenge

{Feb 13} I {LOVE} when I feel beautiful/sexy/pretty! This happens when I...

This one is kinda hard because lately I have been very very down on myself and no I am not just asking for you to tell me otherwise, it is true..... I am pale and chunky! But when I really think about this I love myself much much more and feel pretty when I have a tan (spray or not)! I look like a different person, like there is life to me. It makes a HUGE HUGE difference in how I feel about myself....but at the same time isn't it odd that I am so lazy I rarely tan or go get sprayed? I am a walking contradiction! The last time I was sprayed and looked my best was at Matt's Birthday last October......

{Feb 12} I {LOVE} to blog because....
I love all the friends I have made in the blogging world, I love all the new blogs I follow that I may of not normally have found if I wasn't a blogger myself. I love that I have a place for my rants, ideas, ramblings, recipes and pictures I want to share will friends, family and well the world. I love love love it when someone leaves a comment and I love when people tell me they love my blog...it means the world to me! I am thankful for my followers and that you all put up with me like when I think I am funny but I really am not!

Valentine's Day Challenge

{Feb 10} For Valentine's Day I {LOVE} to bake/cook...
For Valentine's Day Matt and I always go out to eat and celebrate like the day or two before to beat the rush and then on the actual day I cook! For the past few years and this year will be no different I make one of Matt's favorite dishes (it may be his #1).....I think I posted about these before...Giada's Roasted Chicken Purses! They are so rich, fancy and delish! Here is the recipe.........
Ingredients
1 1/4 cup shredded roasted chicken (or any leftover chicken, light and/or dark meat)
3/4 cup whole milk ricotta cheese
1/2 lemon, zested
1/2 teaspoon chopped fresh thyme leaves
1/2 teaspoon salt, plus more for sprinkling
1/4 teaspoon freshly ground black pepper, plus more for sprinkling
32 small, square wonton wrappers
1 large egg, lightly beaten
4 tablespoons butter
1/4 cup grated Parmesan
Directions
In a small bowl combine the chicken, ricotta cheese, lemon zest, thyme, salt, and pepper. Stir to combine.

On a dry work surface place 8 wonton wrappers. Place a rounded teaspoon of the chicken mixture in the center of each wrapper. Using a pastry brush, brush the egg wash around the chicken mixture. Bring four corners of the wonton square together over the filling to form a purse. Press the edges together tightly to form a seal. Wipe the board with a towel until dry and continue making batches of 8 with the remaining wonton skins

Meanwhile, bring a large pot of salted water to a boil over high heat. Add
the purses and cook until they float to the surface, stirring occasionally, about 4 to 5 minutes. Drain the ravioli.

Melt 4 tablespoons of butter in a medium skillet. Turn off the heat, add the cooked pyramids and gently toss. Transfer the pyramids to 4 serving plates. Sprinkle with grated Parmesan and sprinkle with salt and pepper. Serve immediately.

Better late than never?

A ton of people in the blogging world are doing this super cute Valentines Day week post thing! (technical terms there people ha) and I decided I wanted to join....better late than never huh? So I will catch you up to date on the 2 days I am behind.....get excited....
 {Feb 7} When I need some me time I {LOVE} to...
If the "me time" we are talking about is solo time then I love to get in the car by myself, no music just the sounds of everyday life around me and I head for a mall or the nearest Target! I LOVE to shop alone! But if the "me time" is spent with people who are not family then I am happiest on the 1 Friday a month that my book club gals get together! Below is a fun pic from when we went to a movie that was a book together! I just love being around women who share the same love for reading that I do and it is a bonus that we all love the movies too!
 {Feb 8} When I'm feeling down, to cheer myself up I {LOVE} to...
When I am feeling down and I get home from work to find a magazine in the mailbox that does the trick! Really, I subscribe to pretty much every magazine you can image but I am partial to my Food Network Mag.....when I reach in the mailbox to find a stack of magazines I run up the driveway like a fool as fast as I can so I can plop down on the couch and devour them! Yes, that does the trick! Oh and pretty much everything in the cake family also does the trick!
{Feb 9} If I could travel anywhere this snowy February, I would {LOVE} to go...
Drumroll please.....................AUSTRALIA "your going to Australia and you and you" (Oprah?)
 Really after watching Oprah's 4 day extravaganza to Australia I am dying to go it seems so breath taking, lush, relaxing and so many sites I want to take in! I also just finished the Pioneer Woman's book and that is where they went on their honeymoon! I think it is a sign!
 I want to party on the beach of the great barrier reef with Chef Curtis Stone?! HA
 I want to hug a baby Koala Bear! You know I do...........
Well maybe one day Matt and I will get to go there...hmm...my 30th Birthday is coming up! HAHA in my dreams!

Well, all caught up......love is in the air this week!
