Just Great

Would you believe this JUST in time for my four day weekend it looks like I am getting a cold, this is the second morning I have woken up with a sore throat and the coughing has just started! I am gonna be real mad if I have to spend these 4 days in bed! Typical
Lets talk about "Coughing fits".... I get these and always have with a cold... I can feel this "fit" coming on as it starts with a tickle and then a full blown attack. I just had one at work and they are soo embarrassing!!! I go into full blown coughing and hacking... my eyes turn red and tear up.....I then gag myself over and over because of the force of my coughs and let me tell you there is nothing worse then having people watch you cough and gag for like 5 minutes straight. I can't speak during this to even tell people I am not dying, I just try to motion with my arms to people to RUN!! UGG I will have to avoid public places for the next couple of days!
And on a lighter note... Happy Thanksgiving... I hope everyone travels safely! Matt has left with his dad and sister to go to Iowa to visit his grandparents while I stay here to spend time with my family and my brother who is flying in on leave. Tonight I am actually cooking for my family at my house and I am going to try my hardest to not hack all over their meal! haha! Then tomorrow my contribution to Thanksgiving is desserts... I am making a Pumpkin Pie and that to die for Brown Sugar Cake!! Yumm!!

Kendall...

Sunday I had a Scentsy Open House at my casa and Melissa brought Kendall with her (our God Daughter) and she lights up when she sees Matt & Marissa...
She actually lunged for Marissa when she walked in the door...
She is reaching for Abner, she LOVED the weenies.... it was the cutest thing to see her squeal with delight when the dogs were near her.
She petted them and she even loved when they jumped up to kiss her face!
This is right after she got a BIG KISS from Abner, he was such a good boy he even let Kendall tug on his ears!!
You may remember last week I posted about her being in a KJ 103 contest??!! Some Monday Laughter!

I know I know... third post today BUT this video was shown to me a long time ago and it makes me giggle each time I see it! This poor kid is ruining my favorite Michael Buble Song! ha Enjoy.. hope this starts your Turkey Week off right!

TURKEY!

I made this meal last night for Matt, it is from Rachael Ray and she called it Thankful in Thirty...well two things 1. This took me longer than 30minutes 2. It doesn't taste like Thanksgiving.
BUT!! I loved it, I enjoy using Turkey cutlets and I do quite often!! This meal was flavorful, colorful and soo yummy!
Ingredients
1 1/2 pounds turkey breast cutlets
Salt and pepper
1 teaspoon poultry seasoning
1 cup all-purpose flour
2 large eggs, beaten
1 cup bread crumbs
1/2 cup cornmeal
1/2 cup grated Parmigiano-Reggiano
1 orange, zested
2 sprigs fresh rosemary, leaves finely chopped
Olive oil or vegetable oil
1 pound bulk sweet Italian sausage or 3 short links removed from casing
1 medium onion, chopped
1 red bell pepper, chopped
2 large cloves garlic, crushed
2 small to medium zucchini, cut into bite-size chunks
2 tablespoons chopped fresh thyme leaves
Salt and freshly ground black pepper
Season the turkey cutlets with salt, pepper and poultry seasoning. Set up separate dishes with the flour, the eggs and the bread crumbs combined with cornmeal, cheese, orange zest and rosemary. Coat the cutlets in the flour, then in the egg, and then in the bread crumb mixture.

In a medium skillet, heat a drizzle of oil over medium-high heat. Add the sausage, and brown and crumble for 5 minutes. Stir in the onions, peppers, garlic, zucchini, thyme and salt and pepper, to taste. Cover and cook until the zucchini is tender, about 10 to 12 minutes

Heat a saute pan with 1/4-inch of oil over medium to medium-high heat.

Add the cutlets, in batches, and cook until deep golden brown, about 4 minutes on each side. Transfer the cutlets, when cooked, to a baking rack to keep crisp.
Tipsy Gravy- YES! I know it is purple and that kinda weirded Matt out also UNTIL he tasted it!!!!
Gravy:

3 tablespoons butter
3 tablespoons all-purpose flour
1 cup red wine (recommended: Pinot Noir) (I used $7 Barefoot Cab)
2 cups turkey or chicken stock
Salt and freshly ground black pepper

Melt the butter in small skillet over medium to medium-high heat. Whisk in the flour and cook for 1 minute. Stir in the wine and reduce for a minute or so, then whisk in the stock and cook until thickened, about 3 to 4 minutes. Season with salt and pepper, to taste.

Mound the sausage and zucchini on serving plates, top with the cutlets, then douse with gravy and serve.
Yumm!! It was a nice meal and after yesterday with super cleaning of the house, holding a Scentsy open house in the afternoon and Matt putting up all Christmas lights it was Nice to have a wonderful meal to end the day! ENJOY!

New Moon!!!
I will make this short, simple and to the point............it was AMAZING! I had the BEST time with such great friends!!! And Taylor Lautner aka Jacob, OH MAN he is beyond Good Looking!! Team Jacob!!!!!!!
The HUGE and fun Warren Mega screen! Pretty much one of my favorite places!!!!

Becky & Me in our seats in the balcony... so fun! Did I mention seat warmers?
And now the countdown to Eclipse June 30th has begun!!! Watching the movie made me want to run home and re-read the books for the third time!

Finally

SO after a year of waiting and hearing about New Moon it is finally here!! I heard from TONS of my friends who went to the midnight screening that it is amazing and so much better than Twilight!!! I can not wait! Tomorrow a group of 12 of my girlfriends and I are going to have a fun "pre-party" and watch Twilight, play Twilight Scene It and just relax before we go to our 6:30 showing!! We are even more excited that we have reserved seats in the balcony so there is no need to wait hours in line to get good seats plus they serve food and drinks in the balcony!! It will be so much fun!! So get excited girls.............
