Lunch

Hi friends so I wanted to share with you what I am having for lunch the next couple of days......Gazpacho! I researched a few different versions and then added my own spin, I just got thru making my batch. This is a super light, healthy and easy lunch.....you could make this to take in Tupperware for lunch since it is served cold. And might I add it only gets better as the flavors blend over time!
Here is what you will need.....
White Wine Vinegar (or any vinegar you have on hand)
1 Red Onion, 1 Large red pepper, 1 hot house cucumber, 3 garlic cloves, 1 Jalapeno, 1 can fire roasted tomatoes, 1 lime, tomato juice, EVOO, salt and pepper!
I used canned tomatoes because the tomatoes in the store didn't look great so you could use either. After I opened the can I drained off some of the liquid.....and yes, I did put these in the food processor to get finer cuts.
Next up you will need to rough chop each veggie and process them 1 at a time. Don't over process (don't puree) you want fine chops like the consistency of a salsa....
After you mix all the veggies together zest 1 lime before using the juice as well.
Then add........ 1/4 cup EVOO, 1/4 cup Vinegar, 2 cups tomato juice and then use a large amount of salt and pepper to season this large amount of veggies correctly.
You will need to refrigerate it for at least 1 hour and then enjoy! This would be good topped with croutons or sliced avocado!
